
This is a quick and easy appetizer, lunch or even dinner to make when you are short on time, energy or have that empty-fridge feeling. Just like a pizza, every topping is optional and interchangeable. Just don't skimp on the olive oil! Using naan bread as a base results in a chewy, soft crust, but if you want something a bit crispier, use a store-bought flatbread instead. Goes well with a simple greens salad, tossed with EVOO and balsamic, sea salt and a few gratings of parm.

Ingredients
- 1 store-bought flatbread naan bread is perfect for a chewy, soft crust
- a few gratings of hard cheese ie: parmesan or asiago
- small handful cherry tomatoes, halved or sub with mushrooms, thinly sliced red onion, sliced olives, etc
- 1 tbsp chopped herbs ie: dill, basil
- small handful chopped greens ie: arugula or baby kale
- 1-2 tbsp Frescolio Varietal EVOO for drizzling
- sea salt and freshly ground black pepper to taste
- Frescolio Cayenne Agrumato Olive Oil optional, for drizzling

Instructions
- Set oven to broil, and place a rack in the middle of the oven.
- Place the flatbread on a baking sheet, and add grated cheese, herbs, greens and tomatoes (and/or other veggies). If you want crispier greens, add them last. Drizzle with a tablespoon of Varietal EVOO and season with sea salt and freshly ground black pepper.
- Broil on high for 3-5 minutes. Keep a close eye on the flatbread to make sure it doesn't burn (a bit of charring can be nice though).
- Remove from oven once cheese is melted and tomatoes are softened. Drizzle with more Varietal EVOO if desired. If using, add a drizzle of Cayenne Agrumato EVOO as well.
- Serve as a whole flatbread, or cut into pieces if sharing. Enjoy warm.
Recipe Notes
For a vegan flatbread, skip the cheese or use a non-dairy cheese substitute. Use a flatbread that is dairy- and egg-free.
