Ingredients
  • 2 filets salmon
  • 1 cup Frescolio Lemon Infused Olive Oil
  • 1 lemon thinly sliced into rounds
  • 1 lime thinly sliced into rounds
  • 1 orange thinly sliced into rounds
  • salt to taste
  • pepper to taste

  • 1 lemon thinly sliced into rounds
  • 1 lime thinly sliced into rounds

Instructions
  1. Heat oven to 300 F. Line a sheet pan with heavy duty aluminum foil, and top this with a layer of parchment paper (this will make clean-up a breeze).
  2. Place salmon on sheet pan and season with salt and pepper.
  3. Layer the citrus fruit slices on the salmon, alternating the colours.
  4. Drizzle everything with Lemon EVOO and bake until salmon is just turning opaque around the edges and is nearly cooked through, 25 to 35 minutes. (Recommended to cook to 145°F.)

Varying colours of fruit enhance the presentation of this dish, so get some blood oranges if they're in season!
