  1. Wash the mint leaves and pat dry with paper towel. Wash lime, and slice into wedges.
  2. Put mint leaves in the glass and press with the back of a spoon to release the mint oil. Squeeze lime wedge over the mint leaves and drop into the glass. Add coconut white balsamic, and top with sparkling water. Stir and enjoy!
Recipe Notes

If you'd prefer more coconut flavour, add a little more balsamic vinegar to your mocktail.

If you want to make this an alcoholic drink, try adding gin or white rum.

This recipe uses our Coconut White Balsamic. You could use any of the following balsamics for a different taste:
