1. In a medium bowl, combine shallot and garlic. Add salt, vinegar, lime juice & zest and let sit for 10 minutes.
  2. Add chopped herbs and toss to combine.
  3. Using a fork, whisk in EVOO slowly until completely incorporated. Keeps refrigerated for 3 days.
