Ingredients
- 1 shallot minced
- 2 cloves garlic minced
- 1 tsp fine sea salt
- 1/2 cup Frescolio Sherry Wine Vinegar
- 1 lime zested and juiced
- 1/2 cup cilantro finely chopped
- 1/4 cup flat leaf parsley finely chopped
- 1/4 cup mint finely chopped
- 1/4 cup oregano finely chopped
- 3/4 cup Frescolio Varietal EVOO

Instructions
- In a medium bowl, combine shallot and garlic. Add salt, vinegar, lime juice & zest and let sit for 10 minutes.
- Add chopped herbs and toss to combine.
- Using a fork, whisk in EVOO slowly until completely incorporated. Keeps refrigerated for 3 days.
