Chilled Cucumber Soup with Smoked Sea Salt

Ingredients
  • 2 English cucumberspeeled, seeded (if seeds are big) and chopped
  • 1.5cups plain Greek yogurt
  • 3tbsp Frescolio Sicilian Lemon White Balsamic Vinegaror fresh lemon juice
  • 1 small shallotchopped
  • 1 garlic clovechopped
  • 1/3cup fresh dillchopped
  • 1/4cup fresh parsleychopped (optional)
  • 1/6cup Frescolio Dill Infused Olive Oilplus more for serving
  • sea salt and freshly ground black pepperto taste
  • smoked sea saltfor serving (optional)
Instructions
  1. Combine everything but the EVOO, salt and pepper in the bowl of a food processor or blender. Blend until smooth or until it has reached a desired consistency.
  2. Add the EVOO and blend again. Season to taste with salt and pepper. Chill for several hours or overnight.
  3. To serve, drizzle with a little EVOO and a sprinkle of smoked sea salt.
