Ingredients
- 1 ripe avocado
- 1 shallot finely chopped
- 1 tsp Frescolio Lime Infused Olive Oil
- 2-3 tbsp chopped fresh herbs such as parsley, cilantro, basil, or a combination
- 1 ripe tomato
- 2 slices bread
- drizzle Frescolio Balsamic Vinegar Reduction
- salt to taste
- pepper to taste

Instructions
- Mash the avocado with the Lime olive oil, salt and pepper, shallot, and most of the herbs, leaving some for garnish.
- Slice the tomato, and toast the bread until crisp.
- Spread the mashed avocado on the toast, and top with the sliced tomato.
- Drizzle the balsamic vinegar reduction over top, season with salt and pepper, and top with any remaining herbs you have.
