Sweet, savoury, and tangy, our Pedro Ximenez barrel aged sherry vinegar from Jerez, Spain is remarkably complex and delicious. Reminiscent of dehydrated grapes (raisins) and dried fruit like dates and figs, it has a most memorable flavour and aroma. While the sweetness of this vinegar surely comes from the delectable Pedro Ximenez grapes, its dark mahogany colour and intense aroma comes from being aged in American oak casks. This outstanding vinegar is extremely versatile and combines stunningly well with any of our Varietal EVOOs.

Our Rosemary infused olive oil is perfectly balanced: a fresh and fruity Varietal EVOO base is combined with a dash of Rosemary oil to create a harmonious crescendo of rosemary that begins softly and ends with an earthy aromatic kick. The Pinot Nero grape variety produces earthy, but elegant rosé wines that are cool, crisp, and dry. The delightful crispness of this wine not only translates seamlessly into a vinegar, but it blends beautifully with pink grapefruit. Bursting with a tangy fruitiness, our Pink Grapefruit rosé balsamic is especially delicious with bitter greens and fennel. Like all of our vinegar, it makes a fantastic vinaigrette when combined with olive oil, but it is just as delightful when used as a star ingredient.
